"Imitation of a Man" has horses but... uh... Spike eats them. Sort of. Might not be what you're looking for.

Herself has one about a turned Buffy and Spike in which they spend an evening riding and drinking from a horse. Probably not what you're looking for. lol

Those are the only ones I can think of right off the top of my head, except maybe some time-travel fics where Buffy is back in the days before cars (Forward to Times Past comes to mind - Buffy has her own horse or pony in that one)

Not -really- horses but.... Charms of the Clarion by Eurydice features Kelpies which are horse-ish.
Buffy and Crew + Spike get roped into going to Scotland to take care of a Council screw-up.

Old West-ish type story: Riders by Winsome.
Buffy and Spike must stop the 4 Horsemen of the Apocalypse from rising. (Time/Dimensional Travel - Late S5 AU)

Both of these are fairly long and complete.
